Aren't these great?
Aren't these utensils from Anthropologie great?! I love them and only wish I had the money to spend on them right now. I have cheapy utensils currently and while they're functional some of them leave a metallic taste in my mouth as I eat...which does not make for a pleasant dining experience.

Biscuit Beignets
Yet another "idea" from Southern Living are Biscuit Beignets I saw in a flyer of theirs. This is a GREAT way to get a Cafe du Monde vibe without having to use the tedious mix or actually getting yourself to New Orleans. I was amazed at how closely these resembled a real beignet. Beware...it makes A LOT so I recommend making this for company or being REALLY hungry. :) Either way...it's some good eats.
1 tube of refrigerated pull apart buttermilk biscuits (I used Pillsbury)
Canola Oil for frying (I had about an inch in the pan and it worked fine)
Powdered Sugar for dusting
(Some people like to add a little honey on them when they eat them. I am not one of those people...but you may be.)
1. Preheat oil to about 350 degrees.
2. Separate dough into biscuit rounds, then cut each round into quarters.
3. Drop the biscuit quarters into the hot oil and turn when the underside is golden brown.
4. Once both sides are golden, move to a plate layered with paper towels to absorb the residual oil, and immediately sprinkle with powdered sugar.
Tip: Only place enough biscuits in the pan at once that they leave enough room for turning. It took me about 3 batches to get them all done.

Spinach-Ravioli Lasagna
Yesterday I experimented with a new dinner recipe from Southern Living. It was fast and easy. I was able to prepare it without waking up my son from a nap and reheated nicely for the husband when he arrived home from work. I was quite pleased with it and loved the flavor the spinach and pesto combo added to the dish.
1 (6 oz.) package fresh baby spinach, thoroughly washed
1/3 cup refrigerated pesto sauce
1 (15 oz.) jar Alfredo sauce
1/4 cup vegetable broth (you can use chicken instead if you prefer)
1 (25 oz.) package frozen cheese-filled ravioli
1 cup (4 oz.) shredded Italian cheese blend
Garnishes: chopped fresh basil, paprika
1. Preheat oven to 375. Chop spinach, and toss with pesto in a medium bowl.
2. Combine Alfredo sauce and vegetable broth. Spoon 1/3 of Alfredo sauce mixture (about 1/2 cup) into a lightly greased 2.2 qt. or 11x7 inch baking dish. Top with half of spinach mixture. Arrange half of ravioli in a single layer over spinach mixture. Repeat layers once. Top with remaining Alfredo sauce.
3. Bake at 375 for 30 minutes. Remove from oven, and sprinkle with shredded cheese. Bake 5 minutes or until hot and bubbly. Garnish, if desired.

My First Quilt
Well, if I'm going to be cozy there isn't anything I can think of that makes me feel better than a nice blanket to curl up under. My mother-in-law is a fantastic quilter and I asked her to teach me how to create this beautiful piece of art. I am a novice sewer as it is...I just received my first sewing machine in September 2009. But, I find it to be very relaxing...the hum of the sewing machine in a quiet house. A beautiful sound.
This pattern was called "Yellow Brick Road" but for the life of me I can't remember who it is by. I'm sure I can find it sometime if you're interested. I'm fairly pleased with my first quilt, learned a lot along the way, and have already started on my next one. (Although something you will learn about me is that I have a problem with having too many projects going on at once, and thus I lag behind terribly on most of them. Something I hope to remedy through this blog.)
Most of the fabrics in this quilt are from various Moda lines.

Welcome to The Cozy Pumpkin! This is just a little spot on the web for me to share the things I love doing in my "free time." (And maybe some of the craft things I enjoy doing with my child...soon to be children.) Not that there is much of that these days.
